What is Matcha? What is Matcha Tea?

Matcha is produced from the Camellia sinensis plant, just like green tea, but it is cultivated and processed differently. About 30 days before harvest, tea plants are shaded from direct sunlight. This increases chlorophyll production, giving the leaves a richer green color.

After being hand-picked, the stems and veins of the tea leaves are removed, and the leaves are processed into tencha. Then, they are slowly ground into an ultra-fine powder using traditional granite stone mills. This gentle grinding process helps preserve the valuable nutrients in the leaves.

Matcha is known for its high content of catechins and chlorophyll. It also comes in different grades; the highest grade is traditionally used for tea ceremonies.
